The company is expanding its offerings after noticing an increase in demand for vegan products. Last year, Lake Champlain&rsquo;s Innovation and Product Development Manager Kate Brown began experimenting with developing a truffle&mdash;the first product the company launched in 1983&mdash;without its traditional animal-derived ingredients such as cream and butter. After some experimentation, Brown landed on a coconut-based recipe for a vegan truffle.&nbsp;<\/p>\n<p>The square truffles come in two flavors&mdash;Dark Chocolate and Red Raspberry&mdash;both made with fair-trade chocolate and organic coconut cream.
